This is a very tasty ice cream with a combination of pineapple and coconut cream. You will get the taste of a Piña Colada drink.

Ingredients
For the pineapple coconut cream preserve
6 Pineapple round-lets
1/4 cup Coconut cream
2 drops Yellow food colour
3 tbsps Sugar
For the ice cream
1 heaped cup Whipping cream
3/4 cup Condensed milk
Instructions
For the preserve
Chop the pineapple round-lets roughly and puree it (do not puree it fully, leaves some pieces intact)
Pour this in a pan, add sugar and cook it till it resembles a loose jam texture
Add coconut cream, yellow food colour and cook for around 5 mins
Switch off the flame and cool this mixture
For the ice cream
With a hand mixer or a mixing bowl, add whipping cream and beat it till it forms peaks
Add the condensed milk and beat it, retaining the peaks
Pour this into an ice cream pan and freeze it for 2 hours
Remove it and beat it once again
Swirl in the coconut pineapple mixture, making sure to infuse it into the ice cream
Freeze it overnight
Serve cold with a dash of the pineapple coconut cream preserve or topped with pineapple pieces
