Achari Aloo Gobi

This is a very simple subzi. I had very little pickle leftover and wanted to throw it away. Instead, I came up with the idea of adding the pickle in a subzi and decided to add it to this cauliflower and potatoes dish since they are versatile veggies. When I was recently browsing, I found this recipe with achari masala. This dish is delicious because of all the spices in the masala and the tempering ingredients.


Cook Time: 30 mins


Ingredients

  • 1 cup Cauliflower cut into large florets

  • 1 large Potatoes cut into large cubes

  • Salt, to taste

  • 1 Finely chopped onions

  • 3 Slit green chillies

  • 1 tbsp Achaari masala

  • 1 tsp Chilli powder

For tempering

  • 2 tbsp Oil

  • 1 tsp Mustard seeds

  • 1 tsp Fennel seeds

  • 1 tsp Cumin seeds

  • 1/2 tsp Methi seeds

  • 1 tsp Turmeric powder

Instructions

  1. Boil the potatoes and refrigerate. Once cool overnight, this will make it firm, cut into cubes.

  2. In a pan add oil and splutter mustard seeds

  3. Add methi, cumin, fennel seeds and turmeric and splutter

  4. Add sliced onions and saute till dark pink

  5. Add the achari masala, chilli powder, salt and saute well

  6. Add the cauliflower, salt close and cook till 3/4 done

  7. Add the boiled potatoes and cook till done

  8. Serve hot with rotis and dal
