I tried an air fried version of these matris and they tasted really good! You can make these as a snack. I posted this in my Diwali section as I had made this healthy version for Diwali last year.

Cook Time: 25 mins
Ingredients
300 gms Maida
2 tbsp Semolina
Oil or ghee, as much needed to bind
Salt to taste
1/2 tsp Baking powder
1 tbsp Chilli powder
1 tbsp Ajwain
1 tbsp Kasuri methi
Instructions
In a mixing bowl add the maida, sooji and mix well
Add enough oil and mix it well till the dough stands bound when you tighten it in your fist
Add the ajwain, chilli powder, kasuri methi, salt, baking powder and mix well
Add water, very little at a time and make a tight dough. Keep it covered for half an hour.
Roll it into matris and poke with a fork
Line them in a greased tray and bake at 180 degrees C for 20-25 minutes till the sides are light brown, flipping to the other side in 10 minutes
Notes
You can add any spice or masala as per your choice. I added my mom's mango thokku and it tasted heavenly since the thokku also has oil in it.
You can air fry them, it tastes just as good!
