Moong sprouts are a very good source of fiber and they are very healthy. I wanted a recipe to use day-to-day and came up with this one. I have used a spice powder called ‘Goda masala”, which is a Maharashtrian spice powder.

Ingredients
1 cup Moong sprouts
1 Finely chopped onions
1 Finely chopped tomatoes
1 Potatoes cubed
Salt, to taste
1/2 tsp Chilli powder
1 tsp Goda masala
1/2 tbsp Ginger garlic paste
2 Finely chopped green chillies
Finely chopped coriander leaves, for garnish
For tempering
2 tbsp Oil
1 tsp Mustard seeds
1 tsp Turmeric powder
Instructions
In a pan take oil and temper mustard seeds and add turmeric powder
Add onions, ginger garlic green chillies and saute till light brown
Add the tomatoes and saute till mushy
Add chilli powder, goda masala and salt and saute well
Add potatoes and the moong sprouts, a little water, salt and cook till done (make sure you do not add too much water as it should not be a gravy)
Garnish with finely chopped coriander leaves
Serve hot with phulkas
