Aloo Capsicum (with coconut)

This combo is very popular, but this recipe has a twist of coconut to enhance the flavours.

Ingredients

  • 1 Capsicum, chopped into big cubes

  • 3 potatoes, chopped into big cubes

  • Salt, to taste

  • 1 Finely chopped onions

  • 1 Finely chopped tomatoes

  • 1 tbsp Ginger garlic paste

  • 1 tsp Turmeric powder

  • 1 tsp Chilli powder

  • 1 tsp Coriander powder

  • 4 tbsp Fresh grated coconut

  • 1 tsp Cumin seeds

  • 2 tbsp Oil

  • Finely chopped coriander leaves, for garnish

Instructions

  1. Make a paste of coconut and cumin seeds without adding water. Keep aside.

  2. In a pan, take oil. Saute onions till they become brown and add turmeric powder.

  3. Add ginger garlic paste and saute for a minute

  4. Add tomatoes and saute till it becomes soft

  5. Add chilli powder, coriander powder and salt and mix well

  6. Add the vegetables, little water and cook till the vegetables are done

  7. Lastly add the coconut mixture and garnish with coriander leaves, mix well

  8. Serve with parathas
