These are probably one of the best biscuits I have had. When they are eaten hot they just melt in your mouth. You can either eat it as is, or sandwich them with some jam.

Ingredients
390 gms Maida
1 and 1/2 tsp Baking powder
1 tsp Baking soda
1 and 1/2 tbsp Sugar
1 and 1/2 tsp Salt
180 gms Chilled butter
300 ml Chilled buttermilk
Instructions
In a large mixing bowl, whisk maida, baking powder, baking soda, salt and sugar well
Grate the cold butter into the dry ingredients and incorporate it well mixing it with your hands resembling bread crumbs
Make a well in the centre and add the cold thick buttermilk and bring it together (do not knead)
Roll it into a 1 inch thick rectangle, cut it into coins with a 2″ cookie cutter
Line these next to each other on a greased baking tray
Brush these with milk and bake them in a preheated oven at 200 degrees C for 12-15 minutes till it rises and the top gets light brown and looks crispy
Brush these with butter and have it hot or halve it and sandwich with jam or honey
These biscuits should be served hot
