Apple Phirni

Phirni is basically a North Indian dessert. Soaked and ground rice is cooked in milk and served in small clay pots. This is a different version with grated apples in it. You need to buy aromatic American apples for this recipe.

Ingredients

  • 1/2 cup Rice soaked in water

  • 1 litre less 1 cup Milk

  • 1 cup Sugar

  • 2 large Sweet american apples

  • A pinch of Nutmeg

  • 4 Saffron strands

  • Slivered almonds and pistachios, for garnish

Instructions

  1. In a heavy bottom saucepan add the milk and saffron and start boiling

  2. Drain water from the rice and grind it to a coarse paste along with 1 cup milk which was retained

  3. Add the rice paste to the milk and keep stirring continuously till the rice gets cooked and the mixture becomes a little thick

  4. Add the sugar and mix well

  5. Peel the skin of the apples and grate it in your smallest grater size

  6. Add this to the milk and cook for another 2 to 3 minutes till apples are cooked well

  7. Add nutmeg powder and mix well

  8. Pour them in clay kulhads, garnish with slivered almonds and pistachios and refrigerate

  9. Serve cold
