Baingan Bhartha

Who does not know about this vegetable? I do not get a chance to make this often as I do not have a gas stove at home, and this dish tastes best when cooked in flame. So whenever we used to have a BBQ with friends, I would get brinjal (eggplant) burnt on the grill before making it the next day.


Prep Time: 15 mins Cook Time: 30 mins


Ingredients

  • 1 Large brinjal (eggplant)

  • 1 large Finely chopped onions

  • 2 Finely chopped tomatoes

  • 1 tbsp Ginger garlic paste

  • 3 tbsp Oil

  • 1 tsp Cumin seeds

  • 1 tsp Coriander powder

  • 1 tsp Chilli powder

  • 1 tsp Garam masala

  • 1 tsp Turmeric powder

  • Salt, to taste

  • Chopped coriander leaves, for garnish

Instructions

  1. Roast the brinjals in an open flame till it seems cooked and shrivelled, put it in cold water

  2. Remove the skin and mash it with a masher

  3. In a non stick pan take oil, splutter cumin seeds and add turmeric powder

  4. Add the chopped onions, ginger garlic and sauté till brown

  5. Add the chilli powder, coriander powder, and salt and cook for 2-3 minutes till well combined

  6. Add chopped tomatoes and sauté till it becomes mushy

  7. Add the mashed brinjal, garam masala and cook on sim flame for 5 minutes

  8. Garnish with coriander leaves

  9. Goes best with bajra roti and 2 green chillies

Notes

I prefer grinding it in the blender as I do not like the strings of brinjals in the subzi.
