Beetroot Halwa Ice Cream

Ingredients

For the beetroot halwa

  • 1 tbsp Ghee

  • 1 cup grated beetroot

  • 1/2 cup Milk

  • 1/2 cup Sugar

  • 1 tsp Cardamom powder

  • 4 garnish Slivered pistachios

For the ice cream

  • 1 cup Whipping cream

  • 1/4 cup Condensed milk

Instructions

For the halwa

  1. In a non stick pan take 1 tbsp ghee and saute the grated beetroot for 10 mins, it will look shrivelled

  2. Add sugar and cook till the moisture dries up

  3. Add the cardamom powder and dry fruits, mix well and cool completely

For the ice cream

  1. In a cold whipping bowl add the whipping cream and beat till you get hard peaks

  2. Add the condensed milk and mix in well retaining the peaks

  3. Put this in an ice cream tin and freeze for 2 hours

  4. Remove it and beat once more

  5. Mix in the beetroot halwa well to incorporate through the ice cream

  6. Freeze overnight

Notes

  • You can do the same with carrots or bottle gourd
