Pachadi is raita in Tamil. This pachdi can be eaten as an accompaniment with Sambhar rice. Prep Time: 10 mins

Ingredients
2 cups Grated beetroot
Salt, to taste
1/2 cup Fresh grated coconut
3 Green chillies
1 inch Ginger
1 Garlic (optional)
1 cup Yogurt
3 tbsp Water
For tempering
2 tsps Coconut oil
1 tsp Mustard seeds
Instructions
In a pan take grated beetroot sprinkle 2 tbsp water and salt and cook till well cooked
Make a smooth paste of coconut, green chillies, ginger and garlic (if adding) with ½ the yogurt
Once the beetroot mixture is cooled, add this paste and stir well
Add the rest of the yogurt and mix well
In a pan take coconut oil and splutter mustard seeds
Add this to the raita
