Beetroot Pachdi (Raita)

Pachadi is raita in Tamil. This pachdi can be eaten as an accompaniment with Sambhar rice. Prep Time: 10 mins

Cook Time: 15 mins


Ingredients

  • 2 cups Grated beetroot

  • Salt, to taste

  • 1/2 cup Fresh grated coconut

  • 3 Green chillies

  • 1 inch Ginger

  • 1 Garlic (optional)

  • 1 cup Yogurt

  • 3 tbsp Water

For tempering

  • 2 tsps Coconut oil

  • 1 tsp Mustard seeds

Instructions

  1. In a pan take grated beetroot sprinkle 2 tbsp water and salt and cook till well cooked

  2. Make a smooth paste of coconut, green chillies, ginger and garlic (if adding) with ½ the yogurt

  3. Once the beetroot mixture is cooled, add this paste and stir well

  4. Add the rest of the yogurt and mix well

  5. In a pan take coconut oil and splutter mustard seeds

  6. Add this to the raita
