Beetroots are not a really tasty vegetable but this recipe will make you change that opinion!

Cook Time: 30 mins
Ingredients
1 cup Beetroot, cut into small cubes
1 Onion, finely chopped
1 big tomato, finely chopped
Salt, to taste
1 tsp Chilli powder
1 tbsp Oil
1 tsp Cumin seeds
Finely chopped coriander leaves, for garnish
Instructions
Steam the beetroot in a microwave oven adding very little water till cooked
In a pan take oil and splutter cumin seeds
Add onions and saute till it becomes light brown
Add the tomatoes, salt and saute till it blends well
Add the chilli powder and mix well
Add the cooked beetroot, mix well and saute for another minute
Garnish with coriander leaves
Serve hot with phulkas and a dal
Notes
While cooking the beetroot in the oven, do not add too much water as you may have to throw the excess water once the beet is cooked, which is not very good.
