Ingredients
For the outer biscuits
50 gms Butter
110 gms Maida
1/2 tsp Baking soda
15 gms Cocoa powder
50 gms Powdered sugar
1 tbsp Honey
1-2 tsp milk
For the filling
25 gms Butter
1 tsp Cocoa powder
50 gms Icing sugar
A few drops of Milk (optional)
Instructions
For the biscuits
In a mixing bowl cream sugar and butter till pale and airy
Add honey and mix
Sieve maida, baking soda, cocoa powder and mix this gently into the wet mixture
Knead very gently to form a pliable dough, add milk if needed (I needed about 2 tsp)
Cover in a cling foil and refrigerate for half an hour (this is to avoid spreading while baking)
Place a portion of the dough in between 2 baking sheets and roll into 4 mm thickness
Cut rectangle strips of bourbon biscuits size (2-3 cms in breath and 5-6 in length) and line them in a greased tray
Make small holes with a fork to resemble bourbon biscuits
Keep them in the fridge for another 10 minutes
Bake them at 190 degrees C for 10-12 minutes, keeping a strict watch not to burn
Cool them completely before filling
For the filling
Mix all the ingredients except milk and beat well
Add milk only if it is not spreadable
Fill in between 2 biscuits, sandwich it and keep aside
Notes
I did not add sugar because I did not know at which stage I should sprinkle it. I must say this tastes exactly like the store bought ones in terms of texture and taste except the crunchiness of the sugar.
