Ingredients
1/2 kg Small violet brinjals
1 big Potatoes
Salt, to taste
1 tsp Turmeric powder
To make spice powder
1 tbsp Ghee
4 tbsp Coriander seeds
3 and 1/2 tbsp Chana dal
1 tsp Hing
5 Whole red chillies
3 tbsps Fresh grated coconut
1/2 tsp Methi seeds
To temper
3 tbsp Oil
1 tsp Mustard seeds
Instructions
For the spice powder
In pan with ghee, first add methi seeds and saute it for 1 minute
Add hing, dhania seeds, chillies, chana dal and saute till the dals becomes brown
Lastly add the coconut, saute it for 1 minute and turn off the gas. Make a dry powder once cooled.
To proceed
Cut brinjals and potatoes into small strips, soak in turmeric water separately
Microwave the potatoes till they are half cooked
In a pan add oil and splutter mustard seeds
Drain the brinjals and potatoes and add to the pan, cover and cook
Add the salt and saute well till the brinjals are cooked
Lastly add the spice powder and mix well
Serve hot with phulkas
Notes
You can use this spice powder for many other veggies.
