I was on a diet and I was given 200 gms of veggies everyday along with other food. I hit upon this easy peasy subzi and it turned out to be very tasty, can be had with phulkas and a dal or even with rice and dal. In this picture when I made this subzi, I did not have carrots so I made only with cabbage and capsicum, even this tasted nice. If you do not add carrots, you can cook cabbage and capsicum at the same time

Ingredients
2 cups Grated cabbage
1 cup Carrots chopped into cubes
3/4 cup Capsicum finely chopped
Salt, to taste
1 tsp Chilli powder
A pinch of hing
1 tbsp Oil
1 tsp Cumin seeds
1 tsp Turmeric powder
Instructions
In a pan add the oil and splutter the cumin seeds, add turmeric powder
Add the capsicum and carrot and saute for 5 minutes
Add the cabbage and salt and cover with a lid with little water.
When the water on the lid dries up, the veggies would be cooked.
Add the chilli powder and hing and mix well.
Serve hot with phulkas and dal
