Carrot Rice

This is a very different variety of rice. I usually make carrot rice with idli podi but this spice powder is a little different. The crunchiness of the peanut and the tempered dals makes it even more tastier!


Prep Time: 10 mins Cook Time: 45 mins


Ingredients

  • 1 cup Rice

  • 2 Grated carrots

  • 1 Finely chopped onions

  • Salt, to taste

  • 1 tsp Turmeric powder

  • 4 tbsp Oil

  • 1 tbsp Ghee

  • 1 tsp Mustard seeds

  • 1 tsp Urad dal

  • 1 tsp Chana dal

To roast and make a powder

  • 2 tbsp Coriander seeds

  • 1 tsp Cumin seeds

  • 1 tsp Fennel seeds

  • 5 Dry red chillies

  • 2 tbsp Fresh grated coconut

  • 4 tbsp Peanuts

Instructions

  1. Wash and cook the rice with little salt till the grains are separate

  2. Roast the peanuts, remove the skin and keep aside

  3. In a pan dry roast all the ingredients for spice powder and grind it into a powder

  4. Add the roasted peanuts to the blender and grind it once more, making sure the peanuts are not powdered

  5. In a pan take oil and ghee and splutter mustard seeds, urad dal and chana dal and sauté till it becomes light brown

  6. Add the finely chopped onions, turmeric powder and sauté till light brown

  7. Add the grated carrots, salt and sauté till carrots get cooked

  8. Add the ground powder and mix well

  9. Add the cooked rice, mix well for another minute and serve hot with raita
