This is a paratha stuffed with grated cauliflower and spices. The moisture in the cauliflower tends to make the filling ooze out so the filling is cooked till the moisture dries up and then filled in the paratha.

Ingredients
For the filling
1 cup Cauliflower florets
1 tsp Chilli powder
1 tsp Garam masala
Salt to taste
1 tbsp Oil
1/2 tbsp Grated ginger
for ganish Finely chopped coriander leaves
1 tsp Turmeric powder
1 tsp Cumin seeds
For the paratha dough
1.5 cups Wheat flour
Salt to taste
as needed for kneading Water
1 tsp Oil
Ghee for cooking the paratha
Instructions
For the paratha dough
In a large mixing bowl add wheat flour and salt
Add water and make a smooth loose dough
Smear oil and keep covered for half an hour
For the filling
Soak the florets in salted turmeric hot water for half an hour
Remove the florets and grate them in a chopper
In a pan heat oil and splutter cumin seeds
Add ginger and saute for 2 mins
Add the grated cauliflower, all the spices and saute for 5 mins
Garnish with coriander leaves
For the parathas
Roll an orange sized dough into a puri
Add 2 tbsps of filling, close and seal it
Roll this into a thick paratha gently making sure the filling does not come out
Cook this on both sides with ghee on a pan
Serve hot with pickle and yogurt
