This is again one of my innovations when I was in the ice cream making spree. These are my old recipes and hence did not take step by step pictures
Prep Time: 10 hrs
Cook Time: 1 hr
Ingredients
For the fig preserve
1 cup Finely chopped figs
1/2 cup honey
For the ice cream
1 heaped cup Whipping cream
3/4 cup Condensed milk
1 tsp Vanilla essence
Instructions
For the preserve
Chop the figs in a chopper to tiny bits
Add very little water and cook this in a pan till it becomes soft – keep mashing this mixture
Once the water has evaporated and the figs are cooked, add honey and cook for another minute or two to resemble a jam consistency
For the ice cream
In a cold hand mixer or whipping bowl add the whipping cream and beat it till it forms stiff peaks
Add the condensed milk and essence and mix it well retaining the peaks
Freeze this in an ice cream tin for 2 hours
Remove and beat it again
Swirl in the fig preserve mixing it well into the ice cream
Freeze overnight
Serve the ice cream garnished with chopped figs or with the fig preserve
