My mom used to make this barfi every year for Diwali. This is because Diwali comes right after Navratri and during Navratri we get a lot of coconuts for haldi kumkum. We would grate all the coconuts and freeze it to make this sweet during Diwali.
Cook Time: 30 mins
Ingredients
1 cup mounted Fresh grated coconut
1 cup flat Sugar
1/2 cup Milk
1/2 cup Ghee
1 tsp Cardamom powder
Ghee for greasing a plate
Instructions
In a non stick pan, mix the coconut, sugar and milk and mix well
Start cooking it, adding ghee in between till the water evaporates and the mixture starts leaving the sides
Once you see the mixture frothing up with holes forming in the centre, add cardamom powder
Pour this mixture on a greased tray immediately
Once it is warm, cut it into small squares.
Notes
You can even add saffron, but personally I like the smell of the coconut-cardamom combination. Also I do not like the barfi to be yellow.
