Coconut Bhaat Cake (With Egg)

This cake is made for Christmas. I used to have it when I was younger. I gave it a try by referring to different recipes from sources on the web and from my colleague.


Prep Time: 8 hrs

Cook Time: 45 mins


Ingredients

  • 2 cups Fresh grated coconut

  • 1 cup Semolina

  • 1 and 1/2 cups Powdered sugar

  • 1 tsp Vanilla essence

  • 5 tbsp Butter

  • 1 tbsp Cornflour

  • 3 tbsp Maida

  • 2 tsps Baking powder

  • 2 Eggs

  • 3/4 cup Milk

Instructions

  1. Add grated coconut, semolina, sugar, baking powder, corn flour, maida in a bowl.

  2. Beat eggs in a separate bowl till fluffy

  3. Add butter, milk and the dry ingredients and mix with a spatula. This mixture should be a thick pouring consistency.

  4. Keep this covered overnight for 8-9 hours

  5. Add vanilla essence and mix well

  6. Bake at 180 degrees C for 35-40 mins

Notes

You can grind the coconut if it is not grated fine, but I like the coconut shavings to come in between the cake.
