This cake is made for Christmas. I used to have it when I was younger. I gave it a try by referring to different recipes from sources on the web and from my colleague.
Prep Time: 8 hrs
Cook Time: 45 mins
Ingredients
2 cups Fresh grated coconut
1 cup Semolina
1 and 1/2 cups Powdered sugar
1 tsp Vanilla essence
5 tbsp Butter
1 tbsp Cornflour
3 tbsp Maida
2 tsps Baking powder
2 Eggs
3/4 cup Milk
Instructions
Add grated coconut, semolina, sugar, baking powder, corn flour, maida in a bowl.
Beat eggs in a separate bowl till fluffy
Add butter, milk and the dry ingredients and mix with a spatula. This mixture should be a thick pouring consistency.
Keep this covered overnight for 8-9 hours
Add vanilla essence and mix well
Bake at 180 degrees C for 35-40 mins
Notes
You can grind the coconut if it is not grated fine, but I like the coconut shavings to come in between the cake.
