This is the same semolina sheera but with a twist. You can see the recipe of this sheera with pineapple or strawberry here, but this recipe is with coconut milk. I have not added any other flavourings as I wanted to get the rich and authentic coconut milk taste.
Cook Time: 20 mins
Ingredients
1 cup Semolina
2 cups thick Coconut milk
1 and 1/2 cups Sugar
1 cup Water
3 tbsp Ghee
3 tbsp Broker cashew nuts and raisins
Instructions
In a bowl add the water and the coconut milk and bring to a boil
In a frying pan, take 1 tbsp ghee and roast the broker cashew nuts and raisins till nuts get golden brown and raisins bloom, keep aside
In the same pan, add 1 tbsp ghee and roast the semolina till it is light pink and you get a nice roasted aroma
Add the water-coconut milk mixture and saute the mixture continuously till the semolina has absorbed all the liquid and has cooked
Add sugar and continue cooking adding rest of the ghee
Switch off the flame when you see the sheera starting to leave the sides of the pan
Add the roasted cashew nuts and raisins and serve hot
Notes
You can also add cardamom powder but I prefer the authentic coconut milk flavour.
I also did not add any colour or saffron, but feel free to add some.
