Coconut Rice

This is a South Indian mixed rice. It is made on the third day after pongal when we make different types of mixed rice. You can also make it for lunch or dinner. It is best served with snake gourd kootu and fried papad


Cook Time: 45 mins


Ingredients

  • 1 cup Basmati rice

  • Salt, to taste

  • 1 tsp Sugar

  • 3/4 cup Fresh grated coconut

  • 2 tbsp Coconut oil

  • 2 tbsp Ghee

  • 1 tsp Mustard seeds

  • 1 tsp Urad dal

  • 5 Green chillies slit into 2

  • 1/2 tsp Hing

Instructions

  1. Cook the rice till the grains are cooked and separate

  2. In a pan take ghee and coconut oil

  3. Splutter mustard seeds and urad dal, saute till dal becomes light brown

  4. Add green chillies, hing and saute for a minute

  5. Add the grated coconut, salt, sugar and saute for 5 minutes, switch off the gas

  6. Add the cooked rice and mix well

  7. Serve hot with kootu and papad
