Corn and Coriander Rice

This is again a very tasty rice and my friend Saroj’s recipe. The coriander is the taste buster in this recipe.


Cook Time: 20 mins


Ingredients

  • 1 cup Basmati rice

  • 1 cup Coriander leaves

  • ½ Ginger

  • 1 Garlic

  • 4 Green chillies

  • Salt to taste

  • 1/4 cup Frozen corn niblets

  • 2 tbsp Oil

  • 1 tbsp Ghee

  • 1 Sliced onions

Instructions

  1. In a pressure cooker add oil and ghee

  2. Add the onions and sauté till it becomes light pink

  3. Wash the rice, drain and keep aside

  4. Make a paste of coriander leaves, garlic, green chillies and ginger

  5. Add the chilli paste to the onions and sauté for 6-7 mins

  6. Add the rice and sauté for 5 mins

  7. Add corn, water and salt and give 1 whistle

  8. Once done fluff the rice with a fork making sure the rice does not break

  9. Serve hot with the raita
