This is again a very tasty rice and my friend Saroj’s recipe. The coriander is the taste buster in this recipe.
Cook Time: 20 mins
Ingredients
1 cup Basmati rice
1 cup Coriander leaves
½ Ginger
1 Garlic
4 Green chillies
Salt to taste
1/4 cup Frozen corn niblets
2 tbsp Oil
1 tbsp Ghee
1 Sliced onions
Instructions
In a pressure cooker add oil and ghee
Add the onions and sauté till it becomes light pink
Wash the rice, drain and keep aside
Make a paste of coriander leaves, garlic, green chillies and ginger
Add the chilli paste to the onions and sauté for 6-7 mins
Add the rice and sauté for 5 mins
Add corn, water and salt and give 1 whistle
Once done fluff the rice with a fork making sure the rice does not break
Serve hot with the raita
