Dal Bhatti Churma

This is a favourite or staple combination of Rajasthan. Very simple yet extremely delicious. Traditionally, the battis and the battis for the churma are deep fried in ghee but I am quite health conscious and I like to eat them but make them healthy, so my below recipe if baked, please feel free to deep fry them

Ingredients

For the battis

  • 1 cup Coarse wheat flour

  • Salt to taste

  • 5 tbsp Melted ghee

For the dal

  • 5 tbsp Chana dal

  • 5 tbsp Tur dal

  • 5 tbsp Green moong dal

  • 1 tbsp Urad dal

  • Salt to taste

  • 3 tbsp Ghee

  • 3 Cloves

  • 2 Bay leaf

  • 2 Slit green chillies

  • a pinch Hing

  • 1 tsp Garlic

  • 1 Finely chopped onions

  • 1 Finely chopped tomatoes

  • 1 tsp Coriander powder

  • 1 tsp Turmeric powder

  • 1 tbsp Chilli powder

  • 1 tsp Garam masala

  • for garnish Finely coriander leaves

For the churma

  • 1 cup Coarse wheat flour

  • 4 tbsp + 2 tbsp Melted Ghee

  • 2 tbsp Slivered almonds

  • 1 tsp cardamom powder

  • 5 tbsp powdered sugar

Instructions

For the bhatti

  1. Combine all the ingredients in a deep bowl and knead into a semi stiff dough without adding water (if not possible, sprinkle water)

  2. Divide this into equal balls, make a thumb impression in each of them

  3. Line them in a greased baking tray and bake them at 180 degrees C preheated oven for 20-25 mins till one side becomes brown

  4. Turn them over and bake for another 15-20 mins until it turns brown

For the dal

  1. Clean and wash the dals

  2. Combine all the dals, 4 cups of water and salt in a pressure cooker and cook for 3-4 whistles

  3. Heat ghee in a non stick pan, add cloves, bay leaves, cumin seeds, green chillies and hing and saute for a few seconds

  4. Add the garlic paste and onions and saute till the raw smell goes away

  5. Add tomatoes, coriander powder, turmeric powder, chilli powder and garam masala and saute for another 2 mins till the oil starts oozing out

  6. Add the cooked dals along with the water, adjust salt and cook for 2-3 mins

  7. Garnish with coriander leaves

  8. Serve hot with hot battis (I like it with battis broken and dipped in the dal)

For churma

  1. Combine whole wheat flour and 4 tbsps melted ghee in a deep bowl and mix well

  2. Add approx 1/4 cup of water and knead well to make a stiff dough

  3. Shape each portion of the dough in the shape of your fist and press with your fingers in the centre to make an impression

  4. Bake the battis in an oven till done and cool completely

  5. Break the battis and blend it into a coarse powder in a blender

  6. In a pan heat ghee, add the batti powder and fry for 3-5 mins

  7. Add slivered almonds, cashew nuts, cardamom powder and powdered sugar and mix well
