Ingredients
3/4 cup Rice
1/4 cup Urad dal
1 tsp Salt
Chilli powder or pepper powder, for sprinkling
1 tsp Eno
Oil for greasing
For tempering
2 tbsp Oil
1 tsp Mustard seeds
2 Slit green chilies
3 tbsp Water
Instructions
Soak the rice and dal for 4-5 hours (preferably soak in the morning as you need to ferment it overnight)
Grind this into a coarse paste, add salt and keep it covered overnight
Take half of the batter, add eno salt and mix this lightly
Pour the batter on a greased dhokla plate
Sprinkle chilli powder or pepper powder on top
Steam this in a steamer for around 10-15 mins till done
In a pan take oil, splutter mustard seeds and slit green chillies.
Add some water and boil for a minute
Pour this over the steamed dhokla – water makes it soft
Cut into diamond shapes and serve with chutney
Notes
You can even make sandwich dhokla
For this, do not sprinkle chilli powder, just steam it plain
Make thinner doklas and cut into diamond shapes
And in between 2 doklas apply green chutney and serve
