Egg Curry

This is a lovely recipe by a blogger named Micky. I personally love egg curry but I never usually make it since my husband and kids do not like boiled eggs. I usually do not prefer the yellow yolk, so this recipe gives you a choice of discarding the yolk.

Ingredients

  • 4 Hard boiled eggs

  • 1 tbsp Oil

  • 1 tsp Mustard seeds

  • 1 tsp Turmeric powder

  • 1 large Finely chopped onions

  • 2 tsps Ginger garlic paste

  • 1 tsp Chilli powder

  • 1/2 tsp Pepper powder

  • 1 tsp Garam masala

  • 1 tsp Fennel powder

  • 1 tsp Coriander powder

  • 1 Finely chopped tomatoes

  • Salt, to taste

  • 200 ml Coconut milk

  • Finely chopped coriander leaves, for garnish

Instructions

  1. Hard boil the eggs, cut into half and keep aside

  2. Grind onions, ginger garlic and green chillies to a fine paste

  3. In a non stick pan take oil and splutter mustard seeds

  4. Add the ground paste and sauté till brown

  5. Add salt, tomato puree and sauté till mushy and oil separates

  6. Add chilli powder, coriander powder, garam masala, fennel powder, pepper powder and sauté for another minute

  7. Add coconut milk and gently slide the eggs

  8. Boil and simmer for another 10 minutes till done

  9. Garnish with coriander leaves
