This recipe is the resultant of buying carrots and not using them for the purpose I bought :).. But I did not regret that I ventured into making these muffins.. Pumpkin spice was my own version as Carrots generally do not have a strong aroma so I decided on PS. Carrot cakes are generally topped or sandwiched with cream cheese frosting but I wanted to make a simple one in the first time. You can reduce the sugar if the carrots are sweet
