This is a simple chocolate cake that can be had as is without any icing. This is probably the softest cake I have had to date.

Ingredients
1 and 1/4 cup Maida
1 cup powdered sugar
1/4 cup Cocoa powder
1 tsp Baking soda
A pinch of Salt
1 cup Warm water
1 tsp Instant coffee powder
1 tsp Vanilla essence
1 tbsp Vinegar
1/3 cup Oil
Instructions
In a mixing pan, add maida, sugar, salt, baking soda and cocoa powder and mix well
In another glass take warm water and add instant coffee powder and vinegar and mix well
Once cool add this to the flour mixture
Add vanilla essence and the oil
Blend this well with a hand mixer till well mixed (it should be a thick flowing consistency like a dosa batter)
Pour this in a greased round baking tray, tap it twice or thrice to remove air bubbles
Bake at 180 degrees C for around 40 to 45 minutes, while keeping a watch
Slice this once completely cooled
Notes
You can use icing of your choice, one of the easiest is as follows:
Milk - 3/4 cup
Cocoa powder - 2 tbsp
Powdered sugar - 4 tbsp
Vanilla extract - 1 tsp
Mix all these ingredients and beat it well, making sure there are no lumps. In a saucepan take this mixture and cook on low flame till it thickens, as you like. Once completely cool, pour this over the cake keeping the cake on a tray to hold the excess liquid.
