Ingredients
1 and 1/4 cups Maida
1/2 cup Sugar
1/2 cup Butter
1 tsp Vanilla essence
3 tbsp Cocoa powder
1/2 tsp Baking powder
1/2 cup Cashew nuts
2 tbsp Milk
Instructions
Retain 4-5 cashew nuts for garnish and powder ½ cup cashew nuts to a fine powder
In a mixing bowl add the butter and sugar and cream it well
Add the vanilla essence, cashew nut powder and milk and mix well
Mix the maida, cocoa powder and baking powder and add this to the mixture
Make a smooth firm dough, cover it with a cling foil and refrigerate for 30 minutes
Powder the rest of the cashew nuts to small chunks
Roll it into a ½ inch thickness and cut into cookies
Press a few cashew nut pieces on to the cookie and bake in a greased tray for 30 minutes in a preheated oven at 160 degrees C
Notes
I did not have cocoa powder so I used my children’s cocoa drink Nesquik powder and it tasted just as good!
The dough tends to break so roll it very lightly, cut into shapes and very carefully place it in the baking tray
