Eggless Cornflakes Cookies

This recipe has a good amount of butter in it, making it not as healthy as you may think it is. In case you thought you would eat healthy and bought a big packet of muesli or cornflakes, and then decide not to eat it, you can make this recipe :) Most of my recipes stem out of this dilemma! This recipe is really tasty as I added cinnamon flavoured honey muesli and with honey cornflakes.

Cook Time: 15 mins


Ingredients

  • 1/2 cup Maida

  • 1/2 cup + 1/4 cup Cornflakes

  • 1/4 cup unsalted butter

  • 1/4 cup Powdered sugar

  • 1 tsp vanilla essence

  • 1/8 tsp baking powder

  • A pinch of salt

Instructions

  1. Grind the ½ cup cornflakes very coarsely and keep aside

  2. Beat the sugar and butter till it becomes creamy, add vanilla essence

  3. Add the maida, baking powder and the powdered cornflakes and make a smooth dough. If it is crumbly, add a little milk

  4. Cover with a cling foil and refrigerate

  5. Powder ¼ cup of cornflakes into a less coarse powder

  6. Make balls out of the dough, slightly press it, toss it in the cornflakes well, covering the biscuits

  7. Line it in a greased tray and bake for 12-18 minutes at 180 degrees C, keeping a close watch as it may get brown quickly
