I used to love these biscuits when I was a child and I could literally finish an entire packet at a time. My love for this biscuit still stays and I was extremely happy with this recipe as the store bought ones! This recipe needs molasses which is a viscous product resulting from refining sugarcane or sugar beets into sugar.
You can replace molasses with any of the following but molasses will give that authentic taste:
1 cup dark corn syrup, honey or maple syrup
3/4 cup firmly packed brown sugar
3/4 cup granulated sugar, plus 1/4 cup water
Prep Time: 15 mins
Cook Time: 15 mins
Ingredients
1 cup Maida
1/2 tsp Baking powder
1/4 tsp Baking soda
1 tbsp Dry ginger powder
1/2 tbsp Grated ginger
1 tbsp Flax seeds powder
1/4 cup Butter
1/4 cup Molasses
1/3 cup brown sugar
Castor sugar, for dusting
Instructions
Mix the flours, soda, baking powder, dry and wet ginger powder, flax seeds powder and mix well
In a bowl, take the molasses, butter, brown sugar and beat well till it becomes fluffy
Add half the flour and mix well
Add rest of the flour and make a firm smooth dough
Make balls, flatten a bit and dab it on both sides with castor sugar
Bake at 200 degrees C for 5-7 minutes and then at 150 degrees C for another 5 minutes
