Eggless Ginger Biscuits

I used to love these biscuits when I was a child and I could literally finish an entire packet at a time. My love for this biscuit still stays and I was extremely happy with this recipe as the store bought ones! This recipe needs molasses which is a viscous product resulting from refining sugarcane or sugar beets into sugar.

You can replace molasses with any of the following but molasses will give that authentic taste:

  • 1 cup dark corn syrup, honey or maple syrup

  • 3/4 cup firmly packed brown sugar

  • 3/4 cup granulated sugar, plus 1/4 cup water




Prep Time: 15 mins

Cook Time: 15 mins


Ingredients

  • 1 cup Maida

  • 1/2 tsp Baking powder

  • 1/4 tsp Baking soda

  • 1 tbsp Dry ginger powder

  • 1/2 tbsp Grated ginger

  • 1 tbsp Flax seeds powder

  • 1/4 cup Butter

  • 1/4 cup Molasses

  • 1/3 cup brown sugar

  • Castor sugar, for dusting

Instructions

  1. Mix the flours, soda, baking powder, dry and wet ginger powder, flax seeds powder and mix well

  2. In a bowl, take the molasses, butter, brown sugar and beat well till it becomes fluffy

  3. Add half the flour and mix well

  4. Add rest of the flour and make a firm smooth dough

  5. Make balls, flatten a bit and dab it on both sides with castor sugar

  6. Bake at 200 degrees C for 5-7 minutes and then at 150 degrees C for another 5 minutes
