Eggless Mango Muffins

Muffins are generally had for breakfast and this is a good breakfast item made of fresh alphonso mango puree.


Prep Time: 10 mins Cook Time: 30 mins


Ingredients

  • 1 and 1/2 cups Maida

  • 2/3 cup Powdered sugar

  • 1 cup Fresh mango puree

  • 1 tsp Baking powder

  • A pinch of Soda

  • 1/3 cup Oil

  • 1/3 cup Milk

  • 1 tsp Vanilla essence

Instructions

  1. In a wide mixing bowl add the mango puree, oil, sugar, milk and vanilla essence and mix well till the sugar dissolves

  2. Add maida mixed with soda and baking powder and fold lightly to mix well

  3. Pour this into a greased cake tin or muffin tin

  4. Sprinkle sugar on top

  5. Bake at 180 degrees C for 20-30 minutes

Notes

  • You can either make sliced cake or muffins
