I found the orange cranberry combination to be very different in this recipe, so give it a try! Prep Time: 15 mins Cook Time: 25 mins
Ingredients
1 and 1/2 cups Maida
1 and 1/2 tsp Baking powder
1/4 tsp Baking soda
1 cup Sugar
1/2 cup yogurt (should not be sour)
1/2 cup Fresh orange juice
1/3 cup Oil
2 tsps Zest of orange
1 tsp Orange essence
1/2 cup Dried cranberries
1/2 tbsp Flour for dusting the cranberries
Instructions
In a mixing bowl add the maida, baking powder and the soda and mix well
In another bowl add the sugar, yogurt, orange juice, oil, orange zest and the essence and beat well
Add the maida mixture and gently fold in till well incorporated (make sure you do not over mix)
Add the cranberries coated with maida in the mixture and gently mix
Line the muffin tray with greased silicon muffin moulds.
Pour into the moulds filling upto 3/4 level and bake for around 15-18 minutes in a preheated oven at 180 degrees C (check if it is done by pricking it with a toothpick)
