Eggless Orange Pound Cake

Ingredients

  • 1 cup Maida

  • 3/4 cup Powdered sugar

  • 1/4 cup Oil + melted butter (ratio of 2:1)

  • 1/2 cup Fresh orange juice

  • 1 tsp Orange essence

  • 1 tsp Orange zest

  • 1/2 cup Yogurt

  • 1 tsp Baking powder

  • 1/2 tsp Baking soda

  • 4 drops Orange food colour

Instructions

  1. In a bowl, whisk together maida, baking powder and soda and keep aside

  2. In a large mixing bowl, add the sugar and yogurt and mix well

  3. Add the oil, essence, zest and beat once more

  4. Gently fold in the flour mixture and mix well

  5. Add the orange juice and the orange food colour and mix well

  6. Pour this batter in a greased loaf tin and tap it gently thrice

  7. Bake this in a 180 degrees C preheated oven for 30-35 minutes, keeping a watch

  8. Slice it only when completely cool

Notes

You do not generally get a very strong aroma of orange if it is not mixed with anything else. So make a plain sugar frosting on top with orange essence.
