Eggless Sugar Cookies

This is yet another cookie made during Christmas with simple sugar icing. I have posted 2 variations of icing, once with a readymade coloured piping tube and another one with home made chocolate icing

Ingredients

For the cookies

  • 2 cups Maida

  • 1/2 cup Butter

  • 1/2 cup Powdered sugar

  • a pinch Salt

  • 3 tbsp Cornflour

  • 3 tbsp Milk (or as required)

  • 1 tsp Vanilla essence

For the sugar icing

  • 1 cup Icing sugar

  • Food colours, as needed

  • 2 tbsp Milk

  • 1 tsp Rose or vanilla essence

  • for garnish Sugar sprinkles

Instructions

For the cookies

  1. In a mixing bowl whisk maida, salt and cornflour well

  2. In a large bowl, add the butter and sugar and beat it well till it becomes creamy

  3. Add the vanilla essence and mix well

  4. Add the flour mixture and knead gently to form a dough adding little milk at a time till you get a pliable dough

  5. Spread it with your hand on a cling foil, cover it properly and refrigerate for an hour

  6. Roll this into a thick paratha (about 3/4 cms) and cut desired shapes with a cookie cutter

  7. Line these in a greased tray and bake them in a preheated oven at 180 degrees C for 10-12 minutes making sure you do not burn them (the sides should just start turning golden)

  8. Cool them completely

For the icing

  1. In a bowl add the icing sugar, milk and the essence and whisk well

  2. Divide this according to the number of colours you want to use (i used only blue and green)

  3. Slowly with a piping tube, draw out the shape of the cookie leaving little space along the sides

  4. Do this for all the cookies and then start filling it in

  5. Garnish with sprinkles
