This is one of my innovations. This ice cream is done with chakkavaratti which is basically a jackfruit preserve or jam. This chakkavaratti is a Keralite recipe. They make Chakka Paysam out of the varatti and garnish it with tiny coconut bits. It is extremely tasty. I tried this ice cream on the day I made a batch of chakkavaratti. Not a lot of people love the taste of jackfruit, so you will definitely need to have a liking for this fruit to enjoy this ice cream.

Ingredients
For the jackfruit preserve
6 Jackfruits
1/2 cup Jaggery
For the ice cream
1 cup Whipping cream
1/2 cup Condensed milk
Instructions
For the preserve
De-seed the jackfruits and chop them roughly
Puree this in a blender with very little water
In a pan, take jaggery and add very little water and boil till it becomes a thick honey-like consistency
Strain this to remove impurities and take it back in the pan
Add the jackfruit puree and cook till you get a jam – this is called chakkavaratti in Malayalam.
For the ice cream
In a cold hand mixer or whipping vessel, take the whipping cream and whip till you get firm peaks
Add the condensed milk and whip retaining the peaks
Put this in an ice cream tray and freeze for 2 hours
Remove and beat it once again
Swirl in the jackfruit preserve as much as you need making sure that you mix it thoroughly and infuse into the ice cream
Freeze it overnight
Notes
The jackfruit preserve can be stored in the refrigerator for many months. It can be used to make chakkavaratti pradhaman (jackfruit paysam) or chakkappam (steamed rice cakes with jackfruit preserve) etc. for the paysam
They generally add small bits of coconut, so you can add coconut pieces as garnish for the icecream to get the authentic taste of south indian jackfruit dish
