Fig Kheer

This kheer is very tasty and has the goodness of cashew nuts and figs. For seasoning I add only rose essence since adding cardamom or saffron would overpower the aroma of the figs and rose essence.

Ingredients

  • 12 Figs

  • 8 cashew nuts

  • 1 litre Full cream milk

  • 1 cup Full cream milk for soaking figs and nuts

  • 4 tbsp Rice

  • 1/2 cup sugar

  • 1 tsp Rose essence

  • Slivered almonds, for garnish

Instructions

  1. Soak figs and cashew nuts in warm milk for 3-4 hours or till they are soft

  2. Clean and wash the rice. Soak it for an hour. Drain the water and keep it aside.

  3. Blend together fig and cashew to a smooth paste

  4. In a heavy bottom pan, heat 1 litre of milk

  5. Once the milk starts to boil, add soaked rice and allow it to simmer till milk is reduced to 3/4 and rice is cooked well. Keep stirring at intervals.

  6. Now add the fig-cashew mixture, and simmer for another 6-8 minutes while stirring at intervals

  7. Finally add sugar and rose essence, mix well till the sugar dissolves. Simmer for another 2-3 minutes

  8. Take it off the stove and cool

  9. Garnish with slivered almonds, pistachios and saffron. Chill before you serve.
