This kheer is very tasty and has the goodness of cashew nuts and figs. For seasoning I add only rose essence since adding cardamom or saffron would overpower the aroma of the figs and rose essence.

Ingredients
12 Figs
8 cashew nuts
1 litre Full cream milk
1 cup Full cream milk for soaking figs and nuts
4 tbsp Rice
1/2 cup sugar
1 tsp Rose essence
Slivered almonds, for garnish
Instructions
Soak figs and cashew nuts in warm milk for 3-4 hours or till they are soft
Clean and wash the rice. Soak it for an hour. Drain the water and keep it aside.
Blend together fig and cashew to a smooth paste
In a heavy bottom pan, heat 1 litre of milk
Once the milk starts to boil, add soaked rice and allow it to simmer till milk is reduced to 3/4 and rice is cooked well. Keep stirring at intervals.
Now add the fig-cashew mixture, and simmer for another 6-8 minutes while stirring at intervals
Finally add sugar and rose essence, mix well till the sugar dissolves. Simmer for another 2-3 minutes
Take it off the stove and cool
Garnish with slivered almonds, pistachios and saffron. Chill before you serve.
