Makhana or Fox nuts as it is called is used by North Indians in veggies, kheer and just as a snack. It puffs up like popcorn and is very healthy. This is a kheer recipe that I absolutely love and is very easy to make!
Cook Time: 45 mins
Ingredients
1 cup Fox nuts or Makhana
2 cups Milk
1/4 cup Sugar
1/4 cup Evaporated milk
A pinch of Saffron
1/2 tsp Ghee
1 tsp cardamom powder
Slivered almonds and pistachios, for garnish
Instructions
Heat a pan and add 1/2 tsp of ghee and the makhana and roast the makhana till it becomes crisp – if you press the makhana you should be able to break or crush it with your fingers
Put these in a zip lock bag and crush it manually with a rolling pin – it should not be powdered but should be roughly crushed with some pieces retained
In a non stick saucepan, add milk and saffron and boil
Once boiled add the makhana and boil till the milk reduces and the makhana gets cooked
Add the sugar, evaporated milk and boil for 5 more minutes and then switch off the flame
Add cardamom powder and garnish with dry fruits
