This is a very tasty South Indian sambhar variety. This is a little different from the normal samabhar since we do not add any cooked dal to this. The fresh coconut with roasted spices makes this sambhar very tasty! This is best eaten with hot steamed rice and papad.

Ingredients
1 lemon sized Tamarind soaked in hot water
Salt, to taste
1 cup veggies like drumstick, white pumpkin
1 cup Fresh grated coconut
1 tsp Turmeric powder
Roast and grind to a paste
2 tsp Coconut oil
1 tsp Methi seeds
5-6 Red chillies
2 tbsp Tur dal
For tempering
1 tbsp Coconut oil
1 tsp Mustard seeds
5-6 Curry leaves
Instructions
In a pan take plain water add turmeric, salt and add veggies
Once half cooked add the tamarind pulp and boil well
In the meantime, in a pan take coconut oil and roast methi seeds, red chillies and tur dal
Switch off the gas once it is light brown and grind it to a smooth paste with fresh grated coconut
Add this to the cooked veggie mixture and boil for 2 minutes
In a pan take coconut oil, splutter mustard seeds and curry leaves
Add this to the sambhar
Serve this with rice and roasted potato or raw banana curry
