This is a Rajasthani speciality, very tasty and wholesome by itself. This can be had as a one pot meal with just plain raita. Ghattas are basically steamed dumplings made out of besan and spices, boiled in water and cut. You can even make a subzi out of these ghattas.

Ingredients
For the pulao
1 cup Basmati rice
Salt to taste
3 tbsp Whole garam masala (tejpatta, cloves, cardamom, pepper, cumin seeds)
1 tsp Ginger paste
1 tsp Chilli powder
1 tsp Garam masala
1 tsp Coriander powder
1 tsp Cumin powder
1 tsp Ghee
1 tsp turmeric powder
1 tsp Cumin seeds
For the ghatta
1/2 cup Besan
Salt to taste
3 tbsp Yoghurt
1 tsp Chilli powder
1 tsp Cumin seeds
1/2 tsp soda bicarb
1 tsp Turmeric powder
1 tsp Ginger paste
required for dough water
For tempering
2 tbsp Oil
2 tbsp Ghee
1 tsp Turmeric powder
1 tsp Cumin seeds
Instructions
For the rice
In a pan take ghee, add cumin, turmeric powder and sauté well
Add the soaked rice and sauté for 5 mins
Add water and cook the rice till the grains are separate, keep aside to cool
For the ghattas
Mix all ingredients and add little water to make a tight dough
Divide the dough and make a thin cylinder of each
Boil this in water for 10 mins, cut it into small rounds and keep aside
In a pan take oil and ghee, splutter cumin seeds and add turmeric powder
Add the cooked rice, the ghattas and sauté for another 5 mins
Garnish with coriander leaves, Serve hot with raita
