This is a Gujrati sweet, healthy and easy to make. It is called Gol Papdi or Sukhdi. It is important to cook this by switching off the flame. When I tried this for the first time, I did not give importance to this fact and it ended up being a disaster.
Cook Time: 30 mins
Ingredients
1 cup Wheat flour
1 cup Jaggery
1 cup Ghee
to sprinkle khus khus
3 tbsps Slivered almonds
1 tsp Nutmeg powder
Instructions
In a non stick pan, take 1 cup ghee and roast wheat flour on medium flame till you get a nice aroma of roasted wheat (make sure to do this on very sim flame and not burn the flour)
Add 1 tsp ghee and jaggery in it and SWITCH OFF THE FLAME
Sprinkle nutmeg powder and keep stirring with the gas off till it becomes thicker and starts to leave the sides of the pan
Pour it into a greased plate
Garnish with slivered almonds, sprinkle khus khus over it and leave it to cool
While it is still warm, cut it into pieces.
Notes
Once the wheat flour is roasted well, the rest of the recipe has to be made in switched off flame. I made this mistake the first time I tried this recipe and the less I say about the result, the better ;)
