When amma used to make kozhakattais for festivals, it was standard practise that she would make the dough and the filling and I would sit and do the modaks, that is how I am still faster in doing the shape manually as compared to a mould. Making the dough perfect was the most difficult part and I had to learn this. Over the years after I got married, I kept trying until one day I excelled in it. This is one thing I did not learn from my amma because it is next to impossible to get a lumpfree dough using her method, hats off to her!!
