Instant Oats and Semolina Idli

These are very tasty idlis, different from the normal ones we eat. This is spicy and sour and is instant, so does not need fermentation.

Cook Time: 30 mins



Ingredients

  • 3/4 cup Semolina

  • 3/4 cup Oats

  • Salt, to taste

  • 4 Finely chopped green chillies

  • 1 inch Grated ginger

  • 3/4 cup yogurt

  • 1/4 cup Grated carrots

  • 1/2 tsp Eno fruit salt

  • 2 tbsp Finely chopped coriander leaves

For the tempering

  • 2 tbsp Ghee

  • 1 tsp Mustard seeds

  • 1 tsp Urad dal

  • 1 tsp Chana dal

  • 1 tbsp Broken cashew nuts

Instructions

  1. Dry roast oats and make a coarse powder, keep aside

  2. Dry roast semolina till it becomes light brown, keep aside

  3. In a pan take ghee splutter mustard seeds, chana dal, cashew nuts and urad dal and saute till it becomes light brown

  4. Add green chillies, ginger, grated carrots, salt and mix well

  5. Add the semolina and saute for 2 mins

  6. Add the oats powder, coriander leaves and switch off the gas, cool

  7. Add yogurt and mix well. The dough should be like idli dough.

  8. Just before making add eno salt, mix well (it will foam a bit)

  9. Grease the idli moulds, make idlis in the normal way and serve hot with chutney
