I love Kaju Katli but I would get scared to try the recipe as the mixture needs to be cooked to the right consistency to get the desired shape. I found this recipe easier than Kaju Katli. If the mixture does not come out as well, you do not need to worry since we make balls out of the mixture instead.
Cook Time: 1 hr
Ingredients
1 cup cashew Nuts
2 tbsp Milk powder
1 cup Sugar
3/4 cup Water
few strands of Saffron
For the filling
3 tbsp Gulkhand
1 tbsp Mix nuts
1 tsp Cardamom powder
Instructions
Pulse the cashew nuts in a blender to a fine powder (do not overdo, else oil will start oozing out).
In a heavy non stick pan take sugar and water and bring to a boil till you get 1 and ½ strings
Switch off the gas, add the cashew – milk powder and mix well till it forms a dough. Cool this.
Mix all the ingredients for the filling and keep aside
Once cooled, mix this well to for a smooth dough
Grease your hands, take a small ball of the cashew mixture and flatter it a bit with your finger in the middle
Add the gulkhand mixture, close the outer covering gently and make a smooth ball
In a cup add warm water and add the saffron
Apply this saffron on the top of the cashew balls and stick a small slice of pista for decoration
