Kidyo or Kulkuls is a cute sweetish snack preparation that forms a part of the Kuswar (sweets and snacks for Christmas are called kuswar). It forms a part of the goodies prepared for the Christmas festival celebrated in Mangalore. In goa these are made ina different shell like shape and is called Kormolas. Generally egg is added in the recipe and these are fried in oil, but I do not prefer egg so this recipe of mine does not have egg (even though adding egg would make it soft, instead I used flaxegg). I have tried air frying them and baking them in an oven, both turned out to be super crisp. Traditionally, very little sugar is added in the recipe and after frying these are glazed in sugar syrup but again, I did not. If you are not glazing it, you can add additional sugar.
Kulkul means worm in Manglorean language and they are called that since they are worm-shaped with the help of a comb or a fork and curled and then fried. The secret is in sealing this well as it may open up.

Ingredients
250 gms Maida
1/2 tbsp Semolina
1/4 cup Coconut milk or as needed
1 Egg or flaxegg (1 tbsp flaxseeds powder soaked in 3 tbsp warm water for 10 mins)
2 tbsps powdered Sugar
2 tbsp Warm oil
a pinch Salt
Oil for deep frying
Instructions
Roast the semolina till light brown
In a wide mixing bowl, add maida, semolina, flax egg, sugar and salt
Mix in oil and rub the flour well
Add the coconut milk little by little and knead the dough well (keep wetting your hands with coconut milk and knead it for about 7-10 mins). Make a soft pliable dough - once you knead it see your palm, if you can see it greasy, that means the dough is perfect in consistency
Keep this covered with a wet cloth always. Keep aside for half an hour.
Make marble size balls out of this and keep covered
Grease a new comb or a fork
Stretch a ball of dough on the back of the fork
Slowly start curling it to make it look like a silkworm
Make these out of the rest of the dough and keep covered
Deep fry or air fry or bake them in a preheated oven at 180 degrees for 10-15 mins till you see it lightly browning
