Kurkure Bhindi

This is a very famous and tasty subzi. In restaurants you get this subzi deep fried, but instead I had the gas on sim and sauteed it in less oil for a while. The second time I tried this recipe in my airfryer, and it came out really well too!

Cook Time: 30 mins


Ingredients

  • 1 kg Ladies finger

  • 5 tbsp Oil

  • 1 tsp Mustard seeds

For marination

  • 1 tsp Turmeric powder

  • 1 tsp Chilli powder

  • Salt , to taste

  • 2 tsps Garam masala

  • 1 tsp Lemon juice

  • 1 tsp amchur powder

  • 1 tsp Kasuri methi

  • 3 tbsp Thick yogurt

  • 1 tsp Hing

For coating

  • 1/2 cup Besan

  • 1/2 cup Rice flour

  • 1 tsp chilli powder

  • Salt, to taste

Instructions

  1. Stalk the ladies finger and slit it lengthwise into thin strips

  2. Mix all the ingredients for marination in a bowl

  3. Add the bhindi and mix well, keep aside for half an hour

  4. Mix all the ingredients for coating in a wide vessel

  5. Coat all the bhindis in this and keep aside for 15-20 minutes

  6. In a pan heat oil and splutter mustard seeds*

  7. Add the coated bhindis and saute well till it becomes crispy in a sim flame

  8. Serve hot with phulkas and dal

*You can even air dry this in an airfryer
