These are famous evening snacks from Mangalore and Udipi. They are extremely tasty when had in the evening with tea or coffee. Mangaloreans serve this with coconut chutney and sambhar but I have never understood how you can have these sweet dumplings with spicy sambhar or chutney. I usually have it just as is. The dough needs fermentation of 7-8 hours, so plan to make this accordingly.

Ingredients
1/2 kg Maida
2 Ripe bananas
7 tbsps Powdered sugar
a pinch of Salt
1/2 tsp Baking soda
1 cup Sour buttermilk
Oil for frying
2 tbsps Ghee
Instructions
In a blender take bananas, sugar, salt and 1/2 cup buttermilk and blend it (alternatively you can mash the bananas and add the rest of the ingredients)
Take this mixture in a mixing bowl, add the remaining buttermilk and soda and mix well
Add maida little by little and knead into a soft dough (do not add any water)
Add the melted ghee and knead to a soft dough
Keep it covered with a wet napkin for 7-8 hours
Make tiny lemon size balls of the dough
Dust in very little flour and roll into a small thick puri (do not roll it thin, keep it thick)
Deep fry these in oil till it becomes light brown and cooked on both sides
