Mango Barfi (Amba Barfi)

I tasted this barfi for the first time at Chithale Bandhu in Pune. My husband loves anything made of mangoes and I remember buying these for him whenever I go there. One day I decided to try this at home. Most of the mango barfi recipes online are made with Khoya. I persisted in keeping a watch for a recipe similar to this one!


Cook Time: 1 hr


Ingredients

  • 1/2 cup Besan

  • 1 cup Alphonso mango puree

  • 1 cup Sugar

  • 3 tbsp Ghee

Instructions

  1. In a pan take 1 tbsp ghee and roast the besan to dark brown or till you get a nice aroma. Keep aside.

  2. In the same pan take the mango puree, add sugar and start cooking till it becomes like a thick custard

  3. Add the besan, ghee and start stirring till it starts getting thicker and leaving the sides. It will be a mass consistency.

  4. Grease a rectangle tray and put this mixture and level it with a spatula

  5. Once cool cut into small squares
