Mango Kesari

Kesari is basically sheera in Tamil. This is a simple rawa kesari with the flavour and pulp of alphonso mangoes.

Prep Time: 10 mins Cook Time: 30 mins



Ingredients

  • 1/2 cup Semolina

  • 1/2 cup Fresh mango pulp

  • 1/2 cup Sugar

  • 1 and 1/2 cups Water

  • 1 tsp mango essence

  • A pinch of Salt

  • 1/4 cup Ghee

  • 5 tbsp Chopped cashew nuts and raisins

Instructions

  1. In a pan take 1 tsp of ghee and fry the cashew nuts and raisins. Keep aside.

  2. In the same pan add another tbsp of ghee and roast the semolina till light pink and you get a nice aroma

  3. Add boiling water and cook the semolina

  4. Add the mango pulp and the sugar and cook till it becomes thick

  5. Drop in the mango essence and keep adding ghee in between while stirring well

  6. Switch off the flame, add the cashew nuts and cover for half an hour till it gets further cooked in the steam

  7. You can serve hot sheera as it is or topped with cold mango icecream

Notes

  • When you make pulp out of the mango do not grind it. Instead just coarsely crush the pulp so that there are some mango pieces in your sheera.
