Meethe chawal is sweet rice. I posted a recipe of kesari bhaat, which is rice cooked in milk which South Indians make the day after pongal. However, this is cooked in water with little milk added. This can be served as a dessert.

Ingredients
1/2 cup Basmati rice
1/4 cup Milk
1/2 cup sugar
1 cup water
Pinch of yellow food colour
Spices :
2 tbp Broken cashew nuts
2 tbsp Slivered almonds
2 tbsp slivered pistachios
3 tbsp Raisins
3 tbsp Dried coconut slices
4 Cloves
4 Cardamom
1" Cinnamon
1 Mace
1 tsp Cardamom powder
1 tsp Kewra essence
5 Saffron strands
2 tbsp Ghee
Instructions
Soak the basmati rice for 15 minutes
Cook the rice with the yellow colour till fully done, drain excess water
Heat the ghee in a pan, add all the spices and saute until light brown
Add the milk and sugar and boil until the sugar dissolves
Add the cooked rice and saffron and saute for 10 minutes on low flame till the milk dries up a bit, add cardamom powder and the kewra essence and mix well
Serve chilled
