I tasted this rice for the first time in the US at a Mexican restaurant. Mexican cuisine is healthy and spicy and has a lot of jalapenos and red beans!
Prep Time: 8 hrs Cook Time: 30 mins
Ingredients
1 cup Rice
1/4 cup Red kidney beans
1 Thinly sliced onions
3 Spring onions cut
1 Red capsicum roughly chopped
2 big Tomatoes roughly chopped
Salt, to taste
2-3 Jalapenos
1 tbsp Oregano
2 Garlic pods
1 Grated carrots
3 tbsp Olive oil
2 Whole red chillies
Water, to cook the rice
Instructions
Soak the red kidney beans overnight
Heat 1 tbsp of olive oil and add capsicum, tomatoes, red chillies, jalapeño and garlic and sauté till it becomes light brown
Grind this into a paste, keep aside
In another pan add the remaining oil and sauté onions till golden brown
Add rice and sauté well for 5 mins
Add grated carrots, ground paste, salt and water and cook till half done
Add the beans and the oregano and cook till done (rice grains should be separate)
Garnish with spring onions, leaves and serve with tacos
